PRODUCT DETAILS
HotFöam is a professional-grade thickener–emulsifier designed specifically for stabilising hot foams. It enables chefs to create stable, airy foams in both whipped and siphon preparations without the need for traditional stabilisers.
It is flavourless, fast-acting, and delivers immediate structure — allowing foams to hold their shape from pass to plate. Its unique formulation provides both emulsification and whipping properties, ensuring consistency across applications.

DIRECTIONS FOR USE
Heat the liquid mixture, then add the required amount of HotFöam while stirring vigorously until fully dissolved.
Once homogeneous:
Transfer to a siphon and charge with gas or
Whip manually with a whisk
To maintain temperature and stability, keep the siphon in a bain-marie.
